This guide is intended to support the soft drink industry in the development of their Hazard Analysis and Critical Control Point (HACCP) systems. It presents the methodology through examples at different stages, as elements to assist companies in complying with Article 5 of Regulation (EC) No. 852/2004 on the hygiene of foodstuffs. It is aimed at both small and medium-sized companies and covers all stages of production, from the receipt of raw materials to the dispatch of finished products.
