The Guide of Good Hygiene Practice on the handling of shot wild game was issued on the basis of provisions stipulated in Annex I – Primary production – part A, general hygiene provisions for primary production and associated operations of Regulation (EC) No. 852/2004 on the hygiene of foodstuffs and provisions of Section IV of Regulation (EC) No. 853/2004 laying down specific hygiene rules for food of animal origin. This Guide includes instructions for hunters and for hunting area managers regarding the examination of wild animals behaviour before hunting, the personal hygiene of hunters, initial examination of offal and carcassess, handling of wild game at primary production level, general conditions for wild game collecting centers, transport of wild game from collecting centers to the game handling establishment, the model of declaration accompanying the large wild game to the game handling establishment.
